Aside from wings, the one thing that you need at every tailgate party is a good dip.  This Eight Layer Taco Dip is delicious, savory, flavorful and best of all customizable.  I did eight layers, how many can you make?

  • Ground beef: cooked on the griddle for the savory, beefy flavor.
  • Veggies: be creative here. Add what you like best. I went with simple iceburg lettuce, tomatoes and red onion.
  • Cream cheese: creamy base for the taco sauce.
  • Sour cream: used for the taco sauce
  • Taco seasoning: flavoring on the ground beef and taco sauce.
  • Cheese: I used mexican shredded cheese blend for a nice balance of flavors.
  • Pickled jalapenos: vinegar flavored peppers add just enough heat without overpowering the rest of the ingredients. Adds a burst of tanginess to all the savory and creamy textures.

Step 1: What are your eight layers and textures of a taco dip?

Taco dips don’t need to be complicated.  As long as you have something creamy, crunchy, savory and of course meat. For this recipe, I kept things simple, a creamy taco layer, iceberg lettuce, diced tomatoes, red onion, ground beef, taco sauce, cheese and pickled jalapenos.  Other options are refried beans, black olives, guacamole, etc..

What is important is that you don’t make the layers too thick.  Keep in mind, tortilla chips are only so big and you want a to get all the layers in one bite.

Another great option is to make a homemade fresh and spicy salsa.

Step 2: How to make a creamy taco sauce.

The first layer in the eight layer taco dip is a creamy one.  Some make the mix with sour cream and mayo, but I did it with cream cheese and sour cream and it was perfect!  Start with softening a brink of cream cheese using a mixer, add in sour cream and Dad’s Taco seasoning.  Blend all the ingredients together, taste and adjust as needed.

Step 3: Where’s the beef!

I went with a leaner ground beef with a 90% to 10% lean to fat ratio.  Feel free to use what you like best.  

Preheat the griddle to a medium heat and place the entire beef brick onto the flat top.  Press down to get a nice sear.  Flip after 3 minutes and season with Dad’s Taco seasoning.  Next, take the spatula and start breaking down the ground beef making sure all parts cooked evenly.  

Step 4: Time to assemble the eight layer taco dip.

This eight layer taco dip assembly is easy and can be fun.  Be creative with the layers. 

Start with the taco sauce as the first layer.

By adding the creamy layer to the the bottom of the dip will keep everything from getting soggy. 

Next, add a layer of chopped lettuce, dice tomatoes and red onion, and the cooked ground beef.  Drizzle some taco sauce over the meat and finish off with a nice layer of Mexican shredded cheese and topped with pickled jalapenos.  Get some fresh tortilla’s and dig in!  Enjoy!

Your taco dip is very runny most likely due to too much moisture. Layer the wet ingredients at the bottom to prevent sogginess.

Eight Layer Taco Dip

Ingredients 

Beef Ingredients

  • 1 lbs Ground beef
  • 1 tbsp Dad's Taco seasoning

Creamy Ingredients

  • 8 oz Cream cheese brick
  • 1 cup Sour cream
  • 1.5 tbsp Dad's Taco seasoning

Layer Ingredients

  • 2 cups Chopped iceberg lettuce
  • 1.5 cups Shredded Mexican cheese
  • 3 Roma tomatoes
  • 1/2 Red onion
  • 8 oz Pickled jalapenos
  • 2 tbsp Taco sauce

Instructions 

  • Start with softening a brink of cream cheese using a mixer. Add in sour cream and Dad's taco seasoning.  Blend all the ingredients together, taste and adjust as needed.

Substitute ground beef with ground turkey or chicken for a leaner alternative.
Use crunchy and pickled layers for texture
Place the taco sauce at the bottom of the dip as the first layer to prevent everything from getting soggy.
