Over the years, I have smoked hundreds of pork shoulders and have perfected the 2-step method that will guarantee tender, juice and flavorful classic pulled pork every time.

The first step will provide that delicious smokey flavor by smoking the pork shoulder low and slow directly on the grates for 7-9 hours. What to do with leftover pulled pork?

When making pulled pork, there always seems to be a lot of leftovers. A pork shoulder is usually 8-12 pounds in weight which can feed a crowd. But sometimes even the crowd cannot finish all that meat. So what do you do with leftover pulled pork?

Place leftover pulled pork into ziplock bags and freeze it. These can stay in the freezer for 2-3 months.

You can also store it in the fridge for up to 5 days and make different recipes everyday of the week while still enjoying your labor of love.

There are so many delicious leftover pulled pork recipes to make. After all, you can only have so many BBQ pulled pork sandwiches.

How to make Pulled Pork Nachos.

Pulled Pork Nachos are such an easy recipe to use up any leftover pulled pork. Be creative with the toppings or use what you have in the fridge. Don’t over complicate this. Simple ingredients makes for a fast, fun and easy meal.

The trick to making sure all the tortilla chips are coated with a sauce and loaded with toppings is to spread them flat on a large sheet pan instead of stacking high. Not only does this provide an even coating, but it’s also easier to serve.

For the tortillas, plain corn chips are best. But if you are looking to add flavor, use seasoned chips like Doritos cool ranch or spicy nacho.

How to make homemade nacho cheese

I made an easy cheese sauce to coat the chips. While you can use a store bought cheese like a queso or nacho cheese, making your own makes this pulled pork nacho recipe just that much better.

All you need is shredded cheddar, milk, butter, flour and a little bit of seasoning.

Start by melting butter in a sauce pan. Add in flour and make a roux. Once the flour and butter are well mixed add in the milk.

Start adding shredded cheddar cheese once the milk has been whisked in with the roux. Drop a handful at a time. Whisk to melt and blend the cheese in with the milk. Continue this until you run out of cheese and the sauce thickens. Whisking is key in this process.  Do not stop or you risk the cheese to clump and separate from the liquid. 

Add Dad’s Taco seasoning to add flavor to the sauce and make it taste more like nacho cheese.

The secret to getting the cheese sauce silky smooth is adding some Velveeta or American cheese. The sodium citrate ingredient in the cheese creates the smooth texture you want in a sauce, removing grainy pieces. Just a little bit goes a long way, TRUST ME!

Use good quality, thick tortilla chips that can handle the weight of the toppings without getting soggy.

Use a block of cheddar and shred it yourself for fresher ingredients and a more flavorful sauce.

Instead of sour cream use Mexican crema. Similar to the American Daisy, just more liquified. It’s easier to spread across the nachos without the thick heaviness.

I like to add color to my pulled pork nachos. The chips, cheese and meat are all beige and brown. Adding fresh veggies not only adds color but flavor and texture as well.

Start by warming up the pulled pork in the microwave. Room temperature to slighly warm is where you want to have it.

Spread the chips flat on a sheet pan, pour the cheese sauce all over them and top with the left over pulled pork. Season with taco seasoning for some flavor.

Next, add on the toppings. For this recipe, I used diced roma tomatoes, red onion and avocado. You can use guacamole instead, but the small avocado cubes make it easier to scoop up with each chip. I also included sliced jalapenos for some heat and freshly chopped cilantro.

Lastly, drizzle the pulled pork nachos with Mexican crema. Similar in taste to a sour cream, crema is not as thick making it easier to drizzle across the entire platter. For an extra punch of flavor, drizzle hot sauce, or BBQ sauce to compliment the pulled pork.

To finish the pulled pork nacho platter, squeeze lime juice all over. Grab a loaded tortilla chip and feast away. Enjoy!

Pulled Pork Nachos

Pulled pork nachos are perfect for family nights, tailgating or any backyard party.  Full of flavor, texture and fun.

Ingredients 

Pulled Pork Nacho Ingredients

  • 1 lbs Leftover pulled pork
  • 1 bag Tortilla chips
  • 3 Roma tomatoes
  • 2 Jalapenos
  • 1 Avocado
  • 1 Red onion
  • 1/4 cup Chopped cilantro
  • 2 tbsp Mexican crema (sour cream)
  • 1 tbsp Taco seasoning

Cheese Sauce Ingredients

  • 2 cups Cheddar cheese
  • 1 cup Milk
  • 1 tbsp Unsalted butter
  • 1 tbsp All purpose flour
  • 1 tbsp Taco seasoning
  • 1/4 cup Velveeta cheese or 2 slices of American cheese
