Sausages area summer staple in our household.  From grilling over an over fire while camping to making delicious Grilled Sandwich Sub recipes at home, sausage is always on our grocery list.  With just a few ingredients, create an amazingly flavorful sausage roll for lunch or dinner.

Ingredient List for a Grilled Sausage Sub

Sausage Sub ingredients
  • Sausage: for this recipe I went with a classic Polish sausage. However this recipe will also work with Italian sausages as well.
  • Bell peppers: sautéed bell peppers add a nice sweet savoriness and bite to the recipe.
  • Shredded cheese: mozzarella cheese adds a creamy gooeyness with every bite.
  • French Rolls: perfect bread for the sausage subs. Regular hot dog buns will also work.
  • Seasoning: an all purpose seasoning adds the right balance of salt and pepper.

Step 1: How to sauté veggies on the grill?

For this recipe I used a yellow onion and a red and yellow bell pepper.  Pick the veggies you like best to sauté for a nice soft crunch.  

Start with preheating the grill to 375 degrees and set for direct heat.  Slice up the veggies and throw them in a grill pan on the grill.  Add some butter and season with Dad’s All Purpose rub and toss the veggies occasionally. Once they get tender but still have some crunch to them, remove them off the grill and set aside.

Step 2: Grill the sausage for the perfect grilled sausage sub.

Score the sausage you selected for this recipe and place it on the grill at the same temp on direct heat.  Flip every minute until you get a nice crust all around.

Once the sausages are done, set them aside wile you prep the rolls.  In a small bowl, melt some butter and mix in minced garlic.  Spread this mixture on the inside of the rolls.  Next, place the grilled sausage in the rolls, cover with the sautéed veggies, sprinkle some shredded mozzarella cheese and place back on the grill to allow the cheese to melt.

Top with some dijon mustard or freshly chopped parsley on the grilled sausage sub and enjoy!

Grilling sausage is a simple and quick cook. Make sure you have the sausages placed on the grill over high direct heat. Flip every minute to get a seared crust on all sides.

Can I use other sausage types in this recipe?

Yes, any sausage will work for this grilled sausage sub. I used a smoked Polish sausage, but an Italian sausage, chicken sausage or even bratwurst will work here.

Grilled Sausage Sub

Ingredients 

  • 4 Sausage links
  • 2 Bell peppers
  • 1 Yellow onion
  • 4 Sandwich rolls
  • 1/4 cup Shredded mozzarella cheese
  • 6 tbsp Unsalted butter
  • 2 tbsp Minced garlic
  • 1 tbsp Dad's All Purpose rub

Instructions 

  • Start with preheating the grill to 375 degrees and set for direct heat. 
  • Slice up the veggies and throw them on a grill pan on the grill.  Add 2 tbsp's of butter and season with Dad's All Purpose rub and toss the veggies occasionally. Once they get tender but still have some crunch to them, remove them off the grill and set aside.
  • Score the sausage you selected for this recipe and place it on the grill at the same temp on direct heat.  Flip every minute until you get a nice crust all around.
  • In a small bowl, melt 4 tbsp of butter and mix in minced garlic.  Spread this mixture on the inside of the rolls. 
  • Once the sausages are done, place them in the rolls, cover with the sautéed veggies, sprinkle some shredded mozzarella cheese and place back on the grill to allow the cheese to melt.

Notes

Saute some onions along with the bell peppers for more veggie presence.
Use any sausage bun.  I prefer the French rolls, however pretzel rolls, hoagies or hotdog buns will work as well.
Use sausage types that you like best.  I used a smoked Polish sausage, but an Italian sausage will be great or for a leaner option go with a chicken sausage.
