Sweet American Apple Pie.

For those who do not bake regularly, making an apple pie can seen intimidating and time consuming. From making the pie crust, softening the apples and baking the pie, there are a lot of steps, ingredients and experience needed. But when baked properly, this sweet, bright, dessert with hints of cinnamon and served warm with a scoop of vanilla ice-cream is the quintessential American dessert.

Ingredient List for Mini Apple Pies.

mini apple pie ingredients.
  • Cinnamon buns: I used the pre-packed Pillsbury Cinnamon rolls. They bake easily, have a great ratio of dough to cinnamon and delicious icing.
  • Apple pie filling: I used canned apple pie filling. Work smart not hard – you can always make it yourself if you have a good recipe. When it comes to baking, I like to simplify where I can.
  • Seasoning: I used a little bit of Dad’s Maple Bourbon rub to add savoriness while still having the sweetness from the maple. It’s the perfect combo of sweet and savory

Step 1: Prep the apple pie ingredients

With only 3 ingredients, make the most delicious mini apple pieces. Nothing made from scratch, all baked in the smoker, this delicious desert is unique, sweet and savory.

Start by flattening cinnamon roll pieces and placing them into baking cups. Next, chop up the apple slices from an apple pie filling. Scoop a tablespoon into each baking cup.

Sprinkle all the cinnamon cup apple filled pieces with Dad’s Maple Bourbon rub for a hint a savoriness.

Step 2: Grill the mini apple pies.

Why use the oven, when you have a grill. I used my smoker and set it for indirect heat at 350 degrees. Make sure to clean your smoker before you put in the mini apple pies. The cleaner the grill, the tastier the pie. You will still get a slight hint of smokiness in the bake.

Bake for 15-20 minutes or until the the cinnamon cups are a golden brown color.

Remove the smoked mini apple pies from the smoker, drizzle with icing from the packaging and enjoy!

French Toast https://grillinwithdad.com/2024/10/french-toast/ https://grillinwithdad.com/2024/10/french-toast/#respond Fri, 04 Oct 2024 15:27:49 +0000 https://grillinwithdad.com/?p=12354

Dwayne Johnson’s, also known as the Rock, famous french toast breakfast went viral a few years ago. I tried it myself a few times and this is one of my favorite breakfast meals. It’s his cheat meal and I understand why. It’s rich, sweet, filling and straight up delicious. Definitely a treat for a special occasion like Christmas morning breakfast, birthday breakfast or kids day off celebration as in my case. Whatever the reason, this is one for the books.

Step 1: How to make homemade whipped cream

Once you make this simple homemade whipped cream, you will never buy store bought again. Few ingredients, few minutes to whip up and wow!

In a mixing bowl, add heavy whipping cream, powdered sugar and vanilla extract. With a mixer, mix on high speed until the cream is thick.

Place in the fridge to keep cool.

Dad’s Seasonings

Must have grillin seasonings!

Step 2: Make the french toast custard.

This is where the magic happens. This custard smells amazing and tastes even better once cooked.

In a large bowl, add egg yolks, heavy whipping cream, milk, sugar, cinnamon and Dad’s Maple Bourbon rub. The rub is my little twist on this recipe and it’s perfect. The savoriness balances the massive sweetness and the maple flavors are prominent in the taste and smell.

Whisk the ingredients together and you are ready for the dip.

The Rock uses 2 inch thick slices of brioche bread. These are very think slices and the custard will penetrate through all of it if you poke tiny holes with a fork. I have done it this way before and it comes out.

For this recipe, my local store only had pre-sliced brioche bread. Take the bread slices and dunk them into the custard. Make sure to heavily coat both sides. Remove and transfer to a sheet pan. If you have any left over custard, pour the rest on the soaked toasts.

Step 3: Grill up some french toast.

This french toast meal is the perfect breakfast to make on a griddle. Yes, using a stove top and cast iron skillet will work the same.

Preheat the griddle to a medium heat. Spray some butter the flattop to prevent the french toasts from burning. Place the soaked french toast slices onto the griddle and cook 1-2 minutes per side. Flip once the bottoms are lightly brown on the bottom.

For best enjoyment, serve this amazingly delicious french toast with a spoonful of the homemade whipped cream, drizzle some maple syrup of choice, sprinkle some powder sugar over the top and enjoy!

Who doesn’t like desert!  And yes, you can make it on the grill.  I have been making fruit cobblers on the grill for a while and they are the most liked desert by my family.  This grilled peach cobbler is easy to make, fresh and sweet.  This is the ultimate grilling desert.

Step 1: Mix the ingredients.

Grilled peach cobbler ingredients

For this recipe I went with peaches as my fruit selection and I’m so happy I did!  They worked so well with the batter and dressing olive oil on top.

To start, drain the peaches.  Yes, I used canned fruit.  If you are a baker, feel free to soften your own fruit. Place them in a bowl along with some freshly squeezed lemon juice, lemon zest and sugar.  Mix it all together and pour into a heat safe baking dish.

Next, in a mixing bowl add all purpose flour, sugar, cinnamon, baking powder, salt and milk.  Mix the ingredients together until you the batter is smooth.  Pour it over the peaches and it’s ready to be baked or grilled.

Step 2: How to make the best grilled peach cobbler.

Preheat the grill to 350 degrees and set for indirect heat.  Place the fully loaded baking dish on the grill and bake for 30-45 minutes or until the top is golden brown.

Serve with some vanilla ice cream and drizzle with finishing olive oil on top.  Trust me, the savoriness of the olive oil breaks up the sweetness of the grilled peach cobbler making for one tasty desert.  Enjoy!

Brazilian Lemonade https://grillinwithdad.com/2023/06/brazilian-lemonade/ https://grillinwithdad.com/2023/06/brazilian-lemonade/#comments Tue, 06 Jun 2023 15:56:19 +0000 https://grillinwithdad.com/?p=5972

While this is not a grilled recipe, this Brazilian Lemonade can definitely be enjoyed with any one of my delicious BBQ recipes.  It’s refreshing, tangy, sweet and a little bitter.  Perfect on those hot summers days.  Only 3 ingredients needed to make this season’s viral drink.

Step 1: How to make Brazilian Lemonade.

This is a recipe that has gone viral and now I know why.  I’ve tried it and can honestly say this is a winner!  As a mocktail or cocktail, everyone will enjoy this deliciously refreshing tropical drink.

Green Limes
Brazilian Lemonade blend

To start, cut off the ends of 4 limes and slice into quarters.  Next, add the limes into a blender with water and blend it all together.  Yes, you add the whole lime.

Strain the lime juice to remove the rind or any leftover chunks which can result in a lot of bitterness in the drink.  Add the liquid back into the blender, add in 1/2 a can of condensed milk and ice cubes.  Blend the ingredients again.

Pour it into a glass and enjoy or add in some tequila for an extra kick.  Enjoy!

Frequently Asked Questions:

What can I swap the condensed milk with?

Condensed milk is what gives this recipe the sweetness this desert desperately needs. However if you are looking for a less sugary option, use coconut milk or water.

Panettone Bread Pudding https://grillinwithdad.com/2022/12/panettone-bread-pudding/ https://grillinwithdad.com/2022/12/panettone-bread-pudding/#comments Thu, 08 Dec 2022 20:22:12 +0000 https://grillinwithdad.com/?p=3551

Start a new tradition Christmas morning with this Panettone bread pudding.  It’s rich, creamy and fills the house with amazing holiday smells. With an easy prep, bake this dish while you enjoy family time. It’s a twist to a traditional bread pudding but using a Panettone loaf that is rich in Italian holiday flavors with raisins inside. Covered in a peanut butter whiskey cream sauce, this dish is guaranteed to be a hit.  Of course, I made this on my grill for that added extra layer of smokiness.

How to make Panettone Bread Pudding

To start, take the star ingredient, Panettone, and cube into 1-2 inch cubes.

Spread butter around the inside of a 9×13 baking dish and place the cubed up cake inside.

To make the custard, in a mixing bowl, add sugar, milk, heavy cream and eggs.  Whisk the ingredients together and pour over the Panettone.

Recipe Tip

You can add a little bit of nutmeg or cinnamon for that extra holiday flavor, but no more than a teaspoon.  The Panettone is already rich in flavors and you don’t want anything overpowering them.

Dad’s Seasonings

Must have grillin seasonings!

Grill the Panettone Bread Pudding

Yes I baked my bread pudding on the grill.  Before you do the same, make sure the grill is clean with no burnt residue.  Set the grill to 350 degrees on indirect heat.  Place the soaked cake onto the grates and let it bake for about 1 hour.  To ensure a cooked through bread pudding, do a toothpick test by inserting into the center and removing clear.

All this can be done in the oven with the same result.

How to make a Peanut Butter Whiskey sauce

This peanut butter whiskey sauce is the secret that brings this dish together! I could use it on EVERYTHING!

In a saucepan, add Skrewball whiskey, sugar, heavy cream, milk and melted butter. Bring the ingredients to a boil constantly whisking.  Then, let it simmer until the sauce thickens. The alcohol content will burn off making it safe to eat by children.

Recipe Tip

If you prefer not to use whiskey, use creamy peanut butter and a little bit of vanilla extract.

Scoop up the Panettone bread pudding into a bowl, pour some peanut butter whiskey sauce over it and enjoy this decadent, creamy soft treat.

Happy Holidays
