Preheat the grill to 375 degrees and set for direct heat. Cover the garlic head in foil, twist the top shut and roast for 1 hour. Remove and let it cool off.
Next, in a mixing bowl, add room temperature stick of butter, squeeze out the roasted garlic, grated parmesan cheese and Dad's Steak seasoning. Mash and mix the ingredients together until everything is well blended and smooth.
Over direct high heat, place the prawns on the grill and cook 2 minutes per side. Add a halved lemon on the grill to get a nice char on the slice.
Spread the homemade garlic butter on a few sourdough bread slices and toast on the grill.
