In a mixing bowl, add gochujang paste, minced garlic and ginger, soysauce, sesame oil, rice vinegar, brown sugar and honey. Mix the ingredients together until you get a dark red thick liquid.
Pour half of the sauce on the wings, toss them and let them marinade for 30 minutes.
Heat up the grill to 350 degrees and set it for indirect heat. Place the marinated wings directly on the grates and let them cook for 45-60 minutes, flipping halfway through, until the internal temperature reaches 185 degrees.
During the last 5 minutes of the cook, brush the wings with the left over gochujang sauce.
When the wings are done, remove them from the grill and let them rest for 5-10 minutes. Garnish with sesame seeds and scallions, serve and enjoy!
Notes
For less heat, use less gochujang paste. It's a very flavorful but also spicy condiment. For crispy skin on your chicken wings, always cook it at a higher temperature. I like the range 350-375 degrees.
