Coat the raw chicken wing pieces in olive oil and season them with Dad's All Purpose rub.
Heat up the grill to 375 degrees and set it for dual zone cooking.
Place the seasoned wings on the indirect heat side of the grill and grill for 45-60 minutes or until the internal temperature reaches 180 degrees. Flip the wings half way through to ensure an even cook throughout.
Finish the wings on the direct heat side of the grill to crips up and char the outside. This will only take a minute, so don't walk away from the grill.
Remove from the grill and let them rest for 10 minutes.
To make the garlic parm sauce, in a bowl, add mayo, freshly grated parmesan cheese and apple cider vinegar. Mix the ingredients together.
Next, in a saucepan, add butter, minced garlic, Dad's All Purpose rub and crushed red pepper flakes. Place over low heat until the butter melts. Mix the ingredients together.
Finally, pour the melted butter mixture into the mayo sauce and whisk until everything is blended together.
Toss the wings in the homemade garlic parmesan sauce, plate, top with more fresh parm and parsley, serve and enjoy!
Notes
Wings can easily burn on the grill when cooked over high, direct heat. The fat that renders out from the skin will cause flare ups. The trick is to start with indirect heat first, and then finish them over direct heat to get that beautiful char on the outside.
