In a mixing bowl, add heavy whipping cream, powdered sugar and vanilla extract. With a mixer, mix on high speed until the cream is thick. Place in the fridge to keep cool.
Slice 2 inch thick slices of brioche bread. Or use pre-sliced bread.
Take the bread slices and dunk them into the custard. Make sure to heavily coat both sides. Remove and transfer to a sheet pan. If you have any left over custard, pour the rest on the soaked toasts.
Preheat the griddle to a medium heat. Spray some butter or oil on the flattop.
Place the french toast slices onto the griddle and cook 1-2 minutes per side. Flip once the bottoms are lightly brown on the bottom.
Serve the french toast breakfast with a spoonful of the homemade whipped cream, drizzle some maple syrup of choice, sprinkle some powder sugar over the top and enjoy!
