Mix the chorizo and ground beef together and separate into 1/4lb. sections.
Form the patty into a round and flat shape and season both sides with Dad's Taco seasoning.
Place the patties in the fridge for 30 minutes to firm up.
In a bowl, add 2 avocado's, fire roasted tomatoes, freshly squeezed lime juice, more of Dad's Taco seasoning and a pinch of salt. Mash and mix the ingredients together and set aside.
Preheat the grill to 400 degrees and set it for dual zone cooking.
Place the firmed up chorizo and beef patties on the direct side first and grill for 3 minutes per side and then move them to the indirect side.
Add some chihuahua cheese over the patties and continue cooking until the internal temperature reaches 140-145 degrees.
