Cube up the chicken thighs into 1 inch cubes. Drizzle some olive oil for the binder and season with Dad's All Purpose Rub
Dice up a white onion and some cilantro.
Preheat the griddle to high heat and toss the seasoned chicken on the flat top.
Sear on one side for 2 minutes and them flip to sear the other. Continue to do so until the internal temp reaches 175 degrees.
Lower the heat on the griddle to a medium, and place the corn tortillas on the griddle to warm up.
Add a layer of shredded mozzarella cheese over the top. Next, add the grilled chicken to one half of the tortilla, add more cheese and close the taco by folding it in half. Press down with the spatula to create a nice crust on the outside and flip over the repeat on the other side.
Open the taco, add some of the chopped onion and cilantro, pour some taco sauce and close. Repeat this for every taco on the griddle.
