Preheat the grill to 250-275 degrees and set for indirect heat.
Place the seasoned short ribs on the grates opposite of the charcoal and let them smoke for 3-4 hours or until they reach an internal temperature of 170-189 degrees.
In an aluminum foil pan, add Bachan's Sweet Honey BBQ sauce, rice vinegar, ginger and garlic paste and half a chopped up white onion. Mix the ingredients together and place the smoked beef ribs in the braise.
Cover with foil and place it back on the grill for another 2 hours or until probe tender.
Remove them from the grill and let them rest for 10-15 minutes. Slice into individual pieces between the bones and enjoy

Notes
Traditionally, beef short ribs are cut into individual bones, flanken cut or a full rack. If you want to try the same cut at home, ask your butcher or visit your local Asian market. Otherwise, you can just purchase regular beef short ribs and still follow my recipe.To maintain tender and juicy meat, spritz the ribs with apple cider vinegar every hour.
