To spatchcock the chicken, cut out the backbone from the chicken with sheers or a sharp knife. Press down hard on the breast bone to break it so the chicken can lay nice and flat.
Coat the entire chicken with olive oil for the binder and season with Dad's All Purpose rub.
To make BBQ sauce, In a sauce pan, add ketchup, mustard, brown sugar, honey, molasses, Worcestershire sauce, apple cider vinegar, hot sauce and all purpose rub. Simmer over low heat until the sauce starts to thicken.
Preheat the grill to 375 degrees and set it for indirect heat.
Place the chicken skin side up and cook until the breast registers an internal temperature of 155 degrees. Brush the entire chicken with the homemade BBQ sauce and let it caramelize on the skin before removing from the grill.
Once the chicken's internal temperature registers 165 degrees, it is fully cooked. Total cook time should be around 45 minutes depending on the side of the bird. Remove it from the grill and let it rest for 10-15 minutes. This

Chicken Notes:
Whole chicken many times is cheaper per lb. vs. chicken cuts.
Use chicken thighs if you prefer pre-cut chicken. It has more flavor and fattiness.
Make sure to rest the grilled chicken for 10 minutes before slicing.
